In keeping with ancient traditions this Prosecco is produced using only natural yeasts and with in-bottle second fermentation without filtering. It may present as slightly cloudy but this is mere appearance and has no effect on its aromas and flavour.

Technical data
Sensorial qualities: This light and essential Prosecco made using the Sui Lieviti method offers up a range of changing sensations beyond those of sparkling wines made using the Charmat method. The prolonged contact with the yeasts in the bottle allows the wine to develop in quite remarkable ways. From the fresh and fruity notes of apple and wisteria flower and delicate hint of bread crust, over time the flavour becomes leaner, particularly dry and harmonious with an arresting suggestion of yeast.
